These mini baked donuts are seriously moreish. This recipe makes around 24 donuts, so if you require less, simply half the recipe. I used the mould available in the store, and rolled them in some homemade vanilla sugar (caster sugar with a vanilla pod sealed for at least a week).
225g plain flour
175g caster sugar
2tsp baking powder
½ teaspoon salt
1tbsp melted butter
2 large eggs beaten
1tsp vanilla bean paste
30g melted butter (for after cooking)
50g caster sugar (flavoured if you choose)
Oil, for brushing in mould
Now, these really are a dream to make, as long as you have the donut mould!
To start, set the oven, to 180C/160C Fan/Gas Mark 4, and brush each ring in the mould with a little oil.
Now, get all your dry ingredients, and put them all together in a bowl. Slowly incorporate the milk, eggs, vanilla bean paste (extract works just as well), and melted butter. When this is all combined, simply pour your mixture into the moulds, until each cavity is half full.
Now bake for 15 minutes.
Once out of the oven, simply dip in the melted butter, and roll in sugar, make a milkshake or cup of tea, and dunk away!
